What is Escabeche?

 
“Escabeche” is the Spanish word for “pickle.” In Mexican cookery, it is a zesty combination of crunchy pickled vegetables often served with tacos and (in our case) tamales. 

How we use it...

We serve escabeche over dressed cabbage, creating a crunchy and colorful counterpoint for our tamales.
